Welcome to my kitchen! Here are some of my favourite recipes from around the world for you to try. Some are ideas from recipe books which I've adapted and others are recipes I've made up mixing elements of different world cuisines to make my own kind of fusion dishes.

I'm British, I live in France and I'm married to a Finn, which makes things a bit complicated! Some of my recipes will therefore be in English and some in French. When I get time I'll translate them all. I hope you enjoy them!

Aujourd'hui j'ai mis de la Finlande dans mon assiette!

J'ai passé toute la journée a faire la cuisine finlandaise! 100pour100finlande organise un concours destiné aux blogueurs. Puisque je visite la Finlande regulièrement et adore la cuisine finlandaise, j'ai decidé de m'y mettre! J'ai inventé 2 recettes: Filet de biche, sauce cassis et blini croustillant, et Le reve finlandais: darne de saumon sauvage dans son écume d'aquavit! J'espere qu'elles vont vous plaire!

Filet de biche, sauce cassis et son blini croustillant

Ce plat utilise les baies qu'on peut cueiller dans son jardin (cassis) ou dans les marécages (canneberges) en Finlande. Le mélange salé-sucré est très apprécié dans les pays scandinaves.

Ce plat coute environ 30 euros pour 2 personnes.

Pour 2 personnes

2 filets de biche ou de renne
1 oignon rouge, finement coupé
250 ml de bouillon de boeuf
un petit verre de porto ou de vin rouge
1 cuillère à café de confiture de cassis
1 cuillère à café de de sauce de canneberges (cranberries), d' airelles ou de baies de lingon (lingonberries)
2 gouttes de vinaigre balsamique
100 g beurre
1 cuillère à soupe de crème fraiche
2 blinis
200 g céleri-rave coupé en morceaux
petits pois gourmands

Faites revenir les oignons dans du beurre. Rajouter le bouillon de boeuf et portez a l'ébullition. Rajoutez la confiture de cassis et le sauce de canneberges. Réduisez. Cuisez le céleri à la vapeur. Quand c'est cuit, en faire une purée avec du beurre et la crème fraiche. Faites revenir les filets de biche dans du beurre. Servez les filets nappés de la sauce. Mettez une cuillère a soupe de purée de céleri sur le blini préalablement rechauffé et croustillant.

Reve finlandais: darne de saumon sauvage dans son écume d'aquavit

L'aquavit d'O.P. Anderson est un alcool fort epicé avec l'anis, le cumin et les graines de fenouil. Il se marie très bien avec le poisson. Ici je l'ai rajouté à la sauce, mais vous pouvez aussi en boire un verre pour accompagner le plat.

Ce plat est relativement économique si vous utilisez du saumon élevé en mer, par exemple, et coute environ 15 euros pour 2 personnes.

Pour 2 personnes

2 darnes de saumon sauvage
500 ml de bouillon de poisson
2 cuillères à café de graines de fenouil entier
1 feuille de laurier
50-100 ml crème fraiche épaisse
1 pincée de safran
50 ml d'aquavit (alcool fort epicé, par exemple, O.P. Anderson)
2 carottes coupées en rondelles
50g pois gourmands
6 pommes de terre nouvelles
aneth

Cuisez les légumes à la vapeur. Pendant ce temps, préparez l'écume d'aquavit. Mettez 200 ml de bouillon dans une petite casserole avec une cuillère a café de graines de fenouil, la feuille de laurier et le safran. Portez a l'ébullition et puis rajouter 25 ml d'aquavit et la crème. Réduisez. Pochez le saumon dans le bouillon avec 1 cuillère de graines de fenouil pendant 5 minutes. Pendant ce temps faire mousser le sauce avec un mixeur, en rajoutant le reste de l'aquavit. Servez le poisson avec les légumes, nappé de l'écume d'aquavit, et garnir avec de l'aneth.

Egyptian lentil soup

This delicious soup is a meal in itself.

Serves 6-8

1 and a half onions, chopped
2-3 tablespoons oil
3 cloves garlic, crushed
1lb/500g red lentils
3 pt/1.8 litres meat, chicken or vegetable stock
1 teaspoon ground cumin
1 teaspoon ground coriander
1 pinch of cayenne
salt
1 lemon

Fry the onions in a large pan, stirring occasionally, until very brown. Add the garlic and stir.

Add the lentils, then the stock and bring to the boil. Remove any scum.

Stir in the cumin, coriander and cayenne and simmer for 1 hour or until the lentils have disintegrated. Add salt to taste. If necessary add water to thin the soup to a light cream. Serve with wedges of lemon to squeeze on the top.

Welsh leek soup

This is a very substantial soup which can be served as a main dish.

Serves 4-6

1 unsmoked bacon joint, weighing about 1 kg/2 lbs
500g/1lb leeks, washed
1-2 large carrots peeled and chopped
4 potatoes, peeled and sliced
1 tablespoon fine or medium oatmeal
a handful of fresh parsley
salt and ground black pepper

Trim the bacon of excess fat, put into a large pan and pour enough water over it to cover. Bring to the boil, then discard the water. Add more fresh cold water to cover, bring to the boil again, then cover and simmer gently for 30 minutes.

Meanwhile, thickly slice the white and pale green parts of the leeks, reserving the dark green leaves.

Add the sliced leek to the pan, together with the carrots, potatoes and oatmeal. Then bring back to the boil, cover and simmer gently for a further 30 to 40 minutes until the vegetables and bacon are tender.

Slice the dark green leeks very thinly and finely chop the parsley.

Lift the bacon out of the pan and cut into bitesize chunks, then return to the pan. Adjust the seasoning to taste, then bring the soup to the boil once more, adding the leeks and parsley. Simmer gently for 5 minutes before serving the soup.

Asian-style cold lemon chicken with coriander

This is a fresh and zingy summer dish and is great for entertaining, as it's very quick and easy to prepare. The sauce is also very good spooned over cold poached salmon.

Serves 2

500g cooked chicken, chopped
2 tablespoons lemon juice
2 tablespoons Chinese barbecue sauce
3 tablespoons chopped coriander leaves
1 teaspoon finely grated fresh ginger

Combine the lemon juice, barbecue sauce and ginger. Marinate the chicken in it for at least 30 minutes before serving. Sprinkle with coriander to serve. Serve with Contessa's rice salad.

Tajine marocaine: poulet au citron confit et aux olives

Voila une recette que je fais souvent. C'est tres facile a faire et delicieux!

Pour 4 personnes

1 poulet de 1.8 kg
2 citrons confits
2 grosses poignees d'olives marocaines (vertes ou roses)
3 ou 4 oignons emincees
2 gousses d'ail ecrasees
1 cuilleree a cafe de poivre
1 cuilleree a cafe de piment rouge ou paprika doux
1 cuilleree a cafe de cannelle
1 cuilleree a cafe de gingembre
1 cuilleree a cafe de ras el hanout
huile d'olive
sel

Decouper le poulet en morceaux.

Dans une grande casserole avec une couvercle ou une tagine (avec reducteur) mettre 4 cuillerees d'huile d'olive et faire chauffer. Faire revenir legerement les morceaux de poulet et les oignons.

Pendant ce temps, melanger toutes les epices dans un grand bol d'eau, et rajouter les gousses d'ail. Verser le tout dans le tajine. Apres 10 minutes de mijotage, ajouter les citrons coupes en 8 morceaux et les olives.

Laisser cuire a feu tres doux, sous le couvercle, pendant 1 heure et demie. Ne pas remuer, ne pas retourner. Surveiller que ca n'attache pas en cours de cuisson, et si c'est le cas rajouter un peu d'eau. C'est cuite quand la viande se detache facilement des os. Servir avec du riz nature.

Italian panna cotta

This is a fabulous dessert and is super-easy

Serves 4-5

200 ml double cream
300 ml single cream
2-3 dessert spoons sugar
1-2 vanilla pods
3 sheets of gelatine

Soak the gelatine in cold water. Split the vanilla pods down the middle. Heat the cream, sugar and vanilla together on a low heat until the sugar has dissolved and it comes to simmering point. Remove the vanilla pods and scrape out the seeds. Add the seeds to the cream and discard the pods. Take off the heat and add the gelatine (squeeze out excess water). Stir until the gelatine has dissolved. Put the mixture into small individual moulds and leave to set for about 1 hour. This is delicious served alone, with a fruit coulis or preserved fruit, such as bottled plums.

Prune and apricot bread

This is a dark, firm-textured tea bread which is not too sweet and good for the health-conscious.

185 g chopped, pitted dried prunes
185 g chopped dried apricots
60 g unsalted butter
1 and a half teaspoons bicarbonate of soda
250 mls/1 cup boiling water
125 g brown sugar
60 g chopped walnuts
2 eggs
90 g plain flour
90 g wholemeal flour
half a teaspoon baking powder
half a teaspoon salt

In a large bowl combine the dates, figs, butter and baking soda. Pour in the boiling water, stir well and allow to stand for 15 minutes.

Preheat the oven to 180 C/350 F. Grease a medium loaf pan.

Beat the sugar, walnuts and eggs into the date mixture; set aside. In a separate bowl stir together the flours, the baking powder and the salt. Add to the date mixture and stir until just blended.

Spread evenly in the prepared pan. Bake until a thin wooden skewer inserted in the centre comes out clean, around 55 to 65 minutes. Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
